Linden Crust Bakehouse is a small artisan microbakery in La Jolla, California, focused on naturally leavened sourdough bread made the traditional way. Our breads are crafted with only organic flour, water, and sea salt — no commercial yeast, additives, preservatives, or shortcuts.
We use organic flour from Central Milling in California and ferment our dough slowly for 40–48 hours to develop deep flavor, better digestibility, and the rich character of true sourdough bread.
Each loaf is handcrafted in small batches with attention to quality, texture, and nutrition. Inspired by old-world baking traditions, our goal is to bring honest, wholesome bread back to the table.

Golden Rye
Organic Rye & Red Wheat Sourdough
Made with a blend of organic hard red wheat and organic medium white rye flour, this artisan loaf is naturally malted with organic barley for added depth of flavor and a beautifully caramelized crust. Crafted using only water, sea salt, and our in-house cultured sourdough starter, the dough is slowly cold fermented for at least 36 hours to develop its rich aroma, complex character, and improved digestibility. Entirely organic and naturally leavened, this rustic sourdough offers a balanced flavor with subtle rye notes, a hearty crumb, and a crisp artisan crust.

Organic Heritage Wheat Sourdough
Crafted with organic wheat flour and organic whole grain wheat flour, this naturally leavened loaf features a carefully selected blend of hard red winter and hard red spring wheat, malted with organic barley malt for deeper flavor and color. Made with only water, sea salt, and our in-house cultured sourdough starter, the dough is slowly cold fermented for at least 36 hours to develop a rich aroma, complex flavor, and excellent digestibility. A rustic artisan bread with a crisp crust, tender crumb, and the pure taste of traditional long-fermented sourdough — made entirely with organic ingredients.
Rustic Spelt
Organic Whole Spelt Sourdough
Crafted with organic hard red wheat and 100% organic whole spelt flour, this naturally leavened artisan loaf is malted with organic barley for a rich depth of flavor and a beautifully developed crust. Made with only water, sea salt, and our in-house cultured sourdough starter, the dough is slowly cold fermented for at least 36 hours to enhance its aroma, texture, and digestibility. Entirely organic and traditionally prepared, this rustic sourdough offers the nutty, earthy character of whole spelt with a hearty crumb and crisp artisan crust.
Sunrise Einkorn
Organic Whole Einkorn Sourdough
Crafted with organic hard red wheat and organic whole Einkorn flour, this naturally leavened artisan loaf celebrates one of the world’s oldest cultivated grains. Malted with organic barley for added depth of flavor and a beautifully caramelized crust, it is made using only water, sea salt, and our in-house cultured sourdough starter. The dough is slowly cold fermented for at least 36 hours to develop a rich aroma, tender crumb, and improved digestibility. Entirely organic and traditionally prepared, this rustic sourdough offers the delicate sweetness, golden color, and distinctive character of ancient Einkorn wheat.
